Rebekah wasn't feeling well yesterday, so I didn't want to MAKE her eat what we were having for supper. So, I said to her "Rebekah, do you want fish for supper?". She looked at me sadly shaking her head and said, "Mom, before you even THINK about eating that, you need to think about what if there WERE no more fishes in the world left to eat".

**Blink Blink**

Being the warm hearted type of mother I am I said, "well they make more everyday so do you want fish or not?"

She ROLLED HER EYES AT ME, shook her head and went back to her computer game.

Seriously, don't we have a few years before the vegan, tree-hugging, activism starts?

Grant likes to tell me at these times, that's YOUR kid :)

I know, it's been eons since I've posted.

We were in Minnesota having a lovely visit. But now, it's back to work.
Grant started back to working on the fence, I've been sewing and planting,
and Rebekah? She's been busy doing the dishes
(she begged me to let her).



Incidentally, this is the same outfit I wear to do dishes.

Homemade Granola


How much do you need to alter a recipe before it becomes your own? Well, I don't know the answer to that but I think I've changed this one enough to call it mine. I've also doubled it because one batch doesn't last very long around this house! Want to make your own? Great! Here ya go!

Walnut Craisin Granola

7 Cups Old Fashioned oats

2 cups chopped walnuts
1/4 cup flax meal

1 1/2 Cups craisins

1/4 cup olive oil
3/4 cup honey mixed with 1/4 cup warm water
2 tsp pure vanilla extract
1 tsp cinnamon
1 tsp coarse salt (optional)

Mix all ingredients together except the craisins, bake on rimmed baking sheets at 300, stirring every 10 minutes until it's as crispy/toasted as you like (about 30 to 40 minutes). After baking add the craisins. Store in large jar. Enjoy with milk or over yogurt or as a trail mix all by itself.

Feel free to alter this recipe to suit your needs as I did. Use different fruits, nuts, oils, or sweeteners....I don't really think you can mess it up :) Embrace your creative soul! Cook on!
